Mini Apple Tarts - Myra Johnson

2 Puff Pastry sheets
2 small apples of choice
1/4 c. sugar
1/8 tsp cinnamon
1/4 tsp corn starch
1/8 tsp vanilla
1/4 c. apple sauce
Take two thawed sheets of puff pastry and roll each out to about 6 in by 12 in sheet. Cut into 6 squares. Place on parchment lined cookie sheet. With a knife create a 1/2 inch border by lightly cutting into the dough being careful not to cut through. Using a fork, poke holes in the inside of the frame of each square. Refrigerate for 10 minutes. Place cold baking sheet into a 465 degree oven for approx 10 minutes until there are golden brown edges. Remove to prepare filling.
Apple filling: dice apples into small 1/4 inch pieces or smaller. Place in microwave safe bowl and cover with saran wrap. Punch small holes into the saran wrap and microwave for 2 minutes at medium power. Mix steamed apples with sugar, cinnamon, corn starch then add in the apple sauce and vanilla.
Place filling in the center of each cooked square and loosely cover entire cookie sheet with foil. Bake for another 5-10 minutes. Cool for about 20 minutes before serving.
